Chickpea and sesame seed paste is a vegetarian dish and a perfect alternative to pate as it’s an equally rich source of protein and iron. It will take two days to prepare it but the taste of a home-made hummus will make up for the preparation time.
♦200 g dry chickpeas
♦100 g tahini (100 g sesame seeds blended with z 3 tbsps sesame oil)
♦3 garlic cloves
♦½ lemon juice
♦10 sun-dried tomatoes
♦100 ml cold water
♦1 tsp baking soda
Soak chickpeas overnight in water and baking soda. The next day, throw away the water, pour new water and boil chickpeas until soft. Add peeled chickpeas, sesame paste, pressed garlic cloves, lemon juice, finely chopped sun-dried tomatoes, salt and pepper to a bowl and blend until smooth. If the mixture is too dry, add a bit water.
Serve your hummus with crispbread or whole grain bread.
