♦2 glasses green pea (may be frozen)
♦1 big leek
♦1 big onion
♦3 tbsps butter
♦1 l vegetable stock (broth)
♦½ glass heavy cream (36%)
Chop the leek and onion into small cubes. Melt butter in a deep saucepan, add chopped vegetables and peas. Fry the veggies in butter for a while, add 1l vegetable stock and cook until pea is soft. Next, blend the soup until smooth. Finally season with salt and pepper to your taste. You can serve it with a tablespoon heavy cream, toast, roasted pumpkin and sunflower seeds. Enjoy.
